Learn how to make traditional Flammkuchen, a deliciously thin crust topped with crème fraîche, onions, and bacon—perfect for any occasion!

    Prepare the Dough:

    • In a large mixing bowl, combine the flour and salt. Add water and olive oil, mixing until a dough forms.
    • Knead the dough on a floured surface for 5 minutes until smooth and elastic. Cover with a clean towel and let it rest while you prepare the toppings.

    Prepare the Base:

    • Mix the crème fraîche (and yogurt, if using) in a small bowl. Season with salt, pepper, and a pinch of nutmeg (if desired).

    Roll Out the Dough:

    • Preheat your oven to 250°C (480°F) or as high as it will go. If using a pizza stone, place it in the oven to heat.
    • Roll out very thinly on a floured surface—aim for less than 1/8 inch.

    Assemble the Flammkuchen:

    • Place the rolled dough on a baking sheet or pizza peel (if using a stone). Spread a thin layer of the crème fraîche mixture evenly over the surface, leaving a small border.

    Bake for 8-12 minutes, or until the edges are golden and crispy, and the bacon is cooked through.

    Serve:

    • Remove from the oven and let cool slightly. Optionally, garnish with fresh chives or parsley before slicing and serving.
