Prepare the Dough:
• In a large mixing bowl, combine the flour and salt. Add water and olive oil, mixing until a dough forms.
• Knead the dough on a floured surface for 5 minutes until smooth and elastic. Cover with a clean towel and let it rest while you prepare the toppings. - 2
Prepare the Base:
• Mix the crème fraîche (and yogurt, if using) in a small bowl. Season with salt, pepper, and a pinch of nutmeg (if desired).

Roll Out the Dough:
• Preheat your oven to 250°C (480°F) or as high as it will go. If using a pizza stone, place it in the oven to heat.
• Roll out very thinly on a floured surface—aim for less than 1/8 inch.
