Prepare the Dough
If using fresh yeast, dissolve it in the warm water and let it sit for 5 minutes until bubbly. If using instant yeast, mix it directly with the dry ingredients. In the KitchenAid bowl, combine the flour, water, and yeast. Attach the dough hook and mix on low speed for 4 minutes. Add the salt and mix on high for another 4 minutes. Pour the dough onto a lightly floured surface and shape it into a ball.

Lightly flour a large bowl, place the dough ball inside, cover with plastic wrap, and let it rise for 1-2 hours. Transfer the dough to the refrigerator to rest overnight.

Shape the Dough
The next morning, gently punch down the dough to release air. Divide it into 2-4 portions. Lightly roll or gently form each portion into a rectangle. Fold the top edge toward the center and press, then fold the bottom edge to the center and press. Roll the dough into a log, sealing the seam by pinching it closed. For the classic baguette shape, taper the ends by gently rolling them.

Proof the Baguettes
Place the shaped baguettes onto a parchment-lined baking sheet or baguette pan. Cover with a damp towel and let them proof for 45 minutes to 1 hour until slightly puffed.

Bake
Preheat your oven to 275°C (540°F) or as high as it will go. If using a bread stone or pot, preheat it as well. Place a baking dish with water on the bottom rack to create steam. Lightly flour the tops of the baguettes, score them diagonally three times, and bake for 15-20 minutes until golden brown and hollow-sounding when tapped.
